Breakfast

Heat the oil; add onions and fry for 1 to 2 minutes. Add hot chili and cumin, cook for a few minutes. Mash and cook tofu, stirring constantly. Mix coriander and season with salt. Serve with hot tortillas and salsa.

1 tablespoon corn oil

Salt to taste

Crack the corn and chop the beans. In a large saucepan, add butter, onion, celery root, and a glass of water. Let this mixture simmer over low heat until the onions are soft. Add corn, salt, and remaining water and bring to a boil. Cool briefly then puree in a blender, then cool before passing through the food grinder. Reheat and season with salt and pepper.
